SWEET CHILI LIME CHICKEN RECIPE

Chicken made with sweet chili sauce, soy sauce, lime, garlic and served with rice and veggies. This dish makes the perfect weeknight dinner.

Ingredients
  

  • 1.5 - 2 lbs of Chicken
  • 1-2 Tbsp Sesame Oil
  • 3/4 cup Sweet Chili Sauce
  • 1/2 cup Soy Sauce
  • 1/3 cup Lime Juice (about 4-5 limes)
  • 2 Cloves of Garlic (minced)
  • 1/4 tsp Onion Powder
  • Salt and Pepper to taste
  • Green Onion (for garnish)
  • Sesame Seeds (for garnish)
  • 2-3 cups Cooked Rice
  • 1 Large bag of frozen stir fry veggies

Instructions
 

  • Start the rice and veggies according to package directions.
  • Prep your chicken. Trim the fat and cut into bite size pieces.
  • Over medium heat in a large non-stick frying pan, pour in the Sesame Oil and the cut up chicken. Sprinkle with salt and pepper according to taste. Cook until no longer pink.
  • While the chicken is cooking, in a small mixing bowl whisk together the sweet chili sauce, soy sauce, lime juice, and onion powder.
  • Pour the sauce mixture over the chicken and let simmer for five minutes. Then turn off heat.
  • Serve over white rice and stir fry veggies. Garnish with green onion and sesame seeds. Enjoy!
