SWEET CHILI LIME CHICKEN RECIPE
Chicken made with sweet chili sauce, soy sauce, lime, garlic and served with rice and veggies. This dish makes the perfect weeknight dinner.
- 1.5 - 2 lbs of Chicken
- 1-2 Tbsp Sesame Oil
- 3/4 cup Sweet Chili Sauce
- 1/2 cup Soy Sauce
- 1/3 cup Lime Juice (about 4-5 limes)
- 2 Cloves of Garlic (minced)
- 1/4 tsp Onion Powder
- Salt and Pepper to taste
- Green Onion (for garnish)
- Sesame Seeds (for garnish)
- 2-3 cups Cooked Rice
- 1 Large bag of frozen stir fry veggies
Start the rice and veggies according to package directions.
Prep your chicken. Trim the fat and cut into bite size pieces.
Over medium heat in a large non-stick frying pan, pour in the Sesame Oil and the cut up chicken. Sprinkle with salt and pepper according to taste. Cook until no longer pink.
While the chicken is cooking, in a small mixing bowl whisk together the sweet chili sauce, soy sauce, lime juice, and onion powder.
Pour the sauce mixture over the chicken and let simmer for five minutes. Then turn off heat.
Serve over white rice and stir fry veggies. Garnish with green onion and sesame seeds. Enjoy!
