Cowboy Cornbread Recipe

A delicious casserole made with ground beef, seasonings, corn, beans, cheese, and cornbread.

Equipment

  • 1 9 x 13 casserole pan
  • 1 large frying pan

Ingredients
  

Ground Beef Filling

  • 2 lb ground beef
  • 14 oz canned corn (drained)
  • 14.5 oz canned kidney beans (drained)
  • 1.5 cups salsa (any kind)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1.5 cup shredded cheese (any kind, mexican, cheddar, colby, etc)

Cornbread Topping

  • 8.5 oz box Jiffy corn muffin mix
  • 1 egg
  • 14 oz can creamed corn
  • 1/4 cup sour cream

Instructions
 

Beef Filling

  • Begin by browning the ground beef in a large skillet over medium-high heat
  • Add, taco seasoning, corn (drained), kidney beans (drained), salsa, salt, pepper and garlic powder. Stir to combine.
  • Pour mixture into a 9x13 baking dish. Top with shredded cheese.

Cornbread Topping

  • Combine the corn muffin mix, creamed corn, egg, and sour cream in a medium bowl. Mix until you have a thick batter.
  • Spoon mixture evenly over the ground beef and cheese.
  • Bake for 35-45 minutes or until the topping is cooked through and golden brown.
