This Sweet Chili Lime Chicken is another stir fry recipe that was a huge hit with the kids. I have many of these stir fry sauces that we love to make. It’s my favorite way to eat chicken. Made with sweet chili sauce, soy sauce, lime, and served with rice and veggies make the perfect weeknight dinner. It’s quick and easy. The Instant Pot makes perfect rice, and I used my non-stick, non-toxic frying pan, which I love for these sticky sauces. Nothing sticks to it.

SWEET CHILI LIME CHICKEN RECIPE
Ingredients
- 1.5 – 2 lbs of Chicken
- 1-2 Tbsp Sesame Oil
- 3/4 cup Sweet Chili Sauce
- 1/2 cup Soy Sauce
- 1/3 cup Lime Juice (about 4-5 limes)
- 2 Cloves of Garlic (minced)
- 1/4 tsp Onion Powder
- Salt and Pepper to taste
- Green Onion (for garnish)
- Sesame Seeds (for garnish)
- 2-3 cups Cooked Rice
- 1 Large bag of frozen stir fry veggies
Instructions
- Start the rice and veggies according to package directions.
- Prep your chicken. Trim the fat and cut into bite size pieces.
- Over medium heat in a large non-stick frying pan, pour in the Sesame Oil and the cut up chicken. Sprinkle with salt and pepper according to taste. Cook until no longer pink.
- While the chicken is cooking, in a small mixing bowl whisk together the sweet chili sauce, soy sauce, lime juice, and onion powder.
- Pour the sauce mixture over the chicken and let simmer for five minutes. Then turn off heat.
- Serve over white rice and stir fry veggies. Garnish with green onion and sesame seeds. Enjoy!
