This Roasted Red Pepper Pasta dish is quick and simple. Made with a jar of roasted rep bell peppers, onion, garlic, cream, lemon, parmesan cheese, and basil. It’s delicious and goes well with chicken too. We had it just like this for lunch though and it was perfect. I used my non-stick, non-toxic frying pan which I love. It’s perfect for sauces like this, nothing sticks to it! You can use any pasta you like. I had penne pasta on hand today for this dish. If you have spinach on hand, that works well in this recipe too.

ROASTED RED PEPPER PASTA RECIPE
Ingredients
- 16 oz Pasta (any kind)
- 1-2 Tbsp Olive oil (for the pan)
- 1/2 Onion (diced)
- 3 Cloves of minced garlic
- 1 Jar of roasted red bell peppers
- 3/4 cup Heavy Cream
- 1/4 cup Pasta water
- 1/2 cup Grated Parmesan
- Juice of 1/2 a Lemon
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Italian Seasoning
- 1-2 Tbsp Dried or fresh Basil
- 1 tsp Red Pepper flakes (optional garnish)
Instructions
- In a large saucepan, boil water and cook the pasta according to package directions. (make sure to reserve 1/4 cup of the water in a separate cup before draining the pasta when it's done.
- Dice the onion and garlic. Drain the water from the red peppers jar then cut the peppers into large chunks.
- In a large frying pan, put 2 tbsp of Olive Oil in the pan. Put in the onion and cook until soft.
- Add in the garlic and cook for another minute.
- Add in the red peppers, cream, and 1/4 cup of the pasta water.
- Simmer for 3-5 minutes.
- Sprinkle in grated parmesan and lemon juice, and stir to combine.
- Add in the salt, pepper, Italian seasoning, dried basil, and stir.
- Add in the drained pasta and stir. Garnish with optional red pepper flakes. Enjoy!
