Lemon is the perfect ingredient to liven up any dish! Made with yummy other ingredients like garlic, Parmesan, and cream, you can’t go wrong. It’s delicious!
In the video I used my Le Creuset Braiser, which I love. But you can use any deep dish saute pan or my favorite frying pan like this one.
Enjoy! ~Mary
CRISPY LEMON CHICKEN PASTA
A pasta with lemon, garlic, and Parmesan to give it such a yummy flavor and topped with crispy chicken. Enjoy!
Ingredients
FOR THE CHICKEN
- 3-4 Chicken breast, pounded thin. Or two large breast split in half.
- 1/2 cup All purpose flour
- 1 tsp Salt
- 1 tsp Pepper
- 4 Tbsp Salted butter
FOR THE PASTA SAUCE
- 4 Tbsp Salted butter
- 2 cloves Garlic
- 1 1/2 cup Heavy whipping cream
- 1 cup Shredded Parmesan cheese
- Zest of one large lemon (or two small ones)
- Juice of one large lemon (or two small ones)
- 16 oz of your favorite pasta
- Parsley for garnish (optional)
Instructions
- Prepare the chicken. Pound them out thin, or cut them in half. Salt and Pepper each side of the chicken. Then dredge them in the flour on both sides.
- In a large frying pan (or a braiser like I use in the video), heat up 4 Tbsp of the butter. Place chicken in pan and cook until finished. About 10 minutes each side. Cook times vary depending on thickness.
- While the chicken is cooking, prepare your pasta in a different pot according to the package directions.
- When the chicken is done, remove from the pan and place on a plate.
- Put another 4 Tbsp in the pan over medium heat. Add the garlic and cook until fragrant. Whisk the pan to break up any pieces on the bottom of the pan.
- Whisk in the heavy cream, salt, and pepper.
- Once it comes to a slight simmer, whisk in the Parmesan cheese, lemon zest, and lemon juice.
- Turn off heat and add in the cooked pasta.
- Serve with the sliced cooked chicken on top and garnish with parsley. Enjoy!
