I’ve been making this chicken fajita marinade for years and it turns out delicious every time. We have a Traeger Grill and it’s the best grill we’ve owned, and we’ve owned quite a few. It cooks using wood pellets that automatically feeds into the smoker so there’s not much you have to do. It automatically holds the temperature you want.

CHICKEN FAJITA MARINADE
Ingredients
FOR THE MARINADE
- 6-8 Chicken thighs
- 1/2 cup Grapeseed oil (you can use whatever oil you like, but I like grapeseed because it's good for high heat cooking)
- 1/2 cup Lime Juice (about 6-8 limes squeezed)
- 1 Tbsp Chili Powder
- 1 Tbsp Ground Cumin
- 1 tsp Smoked Paprika
- 1 tsp Cayenne
- 1 tsp Sugar
- 2 tsp Salt
- 1 tsp Pepper
- 3 Cloves of Garlic Minced (you can use 1 tsp garlic powder if you don't have fresh garlic)
- 1/2 Onion sliced (you can use 1 tsp onion powder if you don't have fresh onion)
FOR THE TOPPINGS (optional)
- 1 Tbsp Oil for the pan
- 1 Green bell pepper (sliced)
- 1 Red bell pepper (sliced)
- 1 Onion (sliced)
- Shredded cheese
- Tortillas
- Lettuce
- Avocados (sliced)
- Pico de gallo
- Sour Cream
Instructions
FOR THE MARINADE
- In a large gallon zip lock baggy, place all the marniade ingredients in there and mix well.
- Put in your chicken, close the bag tightly, roll the chicken around and massage it a little to make sure the marinade is covering all the chicken completely.
- Refrigerate for 2-24 hours (the longer the better).
- Once done marinading, turn your grill to 375 degrees. Place all the chicken on the grill and close the top. We use the Traeger Grill which is the best grill we've owned. We love it because it cooks your food using real wood without it being directly over a flame while still giving it that delicious grill and smoke flavor. (See the blog post for grill description).
- Cook the chicken 30-35 minutes making sure to flip the chicken halfway through at 15 minutes.
- Meanwhile, place the sliced bell peppers and onion in a frying pan with oil and cook until soft.
- Once the chicken is done, remove from the grill and slice it.
- Make sure to grill your tortillas on a frying pan, it makes all the difference!
- Assemble your fajita.. top with shredded cheese, avocado, bell pepper and onions, and pico de gallo. Enjoy!
