This taste like a gourmet Honey Mustard Chicken recipe. I think the whole grain mustard does the trick. The potatoes and green beans on the side complete the meal. I use my Le Creuset Braiser for this recipe because I love the way food tastes cooked in the braiser when it’s in the oven. But any oven safe frying pan will do. If you don’t have an oven safe frying pan, you can transfer everything to a casserole dish before putting it in the oven.

HONEY MUSTARD CHICKEN
Delicious chicken thighs coated in a gourmet honey mustard sauce, served with small red potatoes and green beans. Enjoy!
Ingredients
FOR THE CHICKEN IN THE PAN
- 2 lbs Chicken (breasts or thighs) I used 6 thighs in this recipe.
- 2 Tbsp Oil (for the pan) I use grapeseed oil which is good for high heat.
- 1 tsp Salt
- 1 tsp Pepper
- 2 tsp Paprika
FOR THE SAUCE
- 2 Tbsp Olive oil
- 1/4 cup Honey
- 1/4 cup Dijon Mustard
- 3 Tbsp Whole Grain Mustard
- 1 Tbsp Minced Garlic
- Juice of 1 whole lemon
- 1/2 tsp Salt
- 2 tsp Dried Rosemary
FOR THE POTATOES AND GREEN BEANS
- 1 small Bag of baby red potatoes
- 2 large Handfuls of fresh green beans chopped into 1 inch chunks.
- 2 Tbsp Olive oil (to drizzle over potatoes and green beans)
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Dried Rosemary
Instructions
PREP THE POTATOES AND GREEN BEANS
- Preheat oven to 425 degrees.
- Cut the potatoes into quarters (or bite size pieces). Cut the green beans into 1 inch pieces.
- Spray a large baking sheet with cooking spray and lay the potatoes and green beans all over it. (I like to use a dark sheet for veggies, I find the light colored ones make the veggies too soggy).
- Drizzle the Olive oil over all of it, then mix it around with your hands to get all the potatoes and greens beans coated with the oil. Then sprinkle salt, pepper, and dried rosemary all over it.
- Set Aside.
PREPARE THE HONEY MUSTARD SAUCE
- In a small bowl, whisk together the honey, dijon mustard, whole grain mustard, lemon juice, salt, and rosemary. Set aside.
PREPARE THE CHICKEN
- In an oven safe frying pan, or a braiser like I use in the video, heat up the oil. I use grapeseed oil as it's better for high heat, but any oil will work.
- Place the chicken thighs in the pan and generously season with the salt, pepper, and paprika on each side. Cook the chicken for 2-3 minutes each side.
- Pour the honey mustard sauce all over the chicken. Then place in the oven.
- Put the veggies in the oven as well. Bake all of it for 20 minutes at 450 degrees.
- Server and Enjoy!
