This Cheesy Pesto Chicken is made with chicken breasts, cream cheese, basil pesto, and mozzarella cheese. It’s so good with the fresh tomatoes and top and the lemon butter noodles. I made mine with a generous amount of the cream cheese and pesto on top of the chicken, but you can make as little or as much sauce on top as you like. Don’t skip out on the fresh cherry tomatoes on top, they go so good with the flavor of the chicken!

CHEESEY PESTO CHICKEN
This Cheesy Pesto Chicken is made with chicken breasts, cream cheese, basil pesto, mozzarella cheese, and topped with cherry tomatoes.
Ingredients
FOR THE CHICKEN
- 2 large chicken breast
- salt and pepper to taste
- 8 oz softened cream cheese
- 1/2 cup basil pesto
- 1 cup mozzarella cheese
FOR THE PASTA
- 16 oz linguine noodles
- 2 tbsp salted butter
- 2-3 tbsp basil pesto
- juice of 1 lemon
- salt and pepper to taste
Instructions
CHICKEN
- Fillet your chicken breasts in half to make 4 thin chicken breasts.
- Salt and pepper them to taste
- Spray a 9×13 casserole dish with cooking spray.
- Place chicken in the dish. Set aside.
- In a small mixing bowl, mix together the softened cream cheese, and 1/2 cup of basil pesto. Then spread it evenly over the chicken.
- Sprinkle the mozzarella cheese all over the chicken. Bake at 375 degrees for 30-40 minutes, depending on how thick your chicken is.
- When the chicken is done, top with fresh diced cherry tomatoes. Place a chicken breast on top of a plate of noodles and enjoy!
PASTA
- Boil the pasta noodles until tender, then drain the water.
- Mix in 2 tbsp of butter, 2-3 tbsp of basil pesto, the juice of 1 lemon, and salt and pepper to taste. Stir and mix well.
