This chicken sandwich was so moist and delicious. The chicken was very tender. You can always use this exact recipe to fry in a frying pan, but I wanted to bake them. I think the sour cream was the trick for the tender chicken. The homemade honey mustard sauce on the sandwich was a must! I bought chicken breasts that were already sliced in half, and then I cut each peice in two to make it a perfect size for a sandwich. We had ours on sweet hawaiian buns with lettuce and tomato.

CRISPY OVEN BAKED CHICKEN SANDWICH RECIPE
Ingredients
FOR THE MARINADE
- 2-3 Chicken breasts – filed in half then cut into two pieces.
- 1/3 cup Sour cream
- 2 Eggs
- 1/2 tsp Ground Mustard
- 1/2 tsp Paprika
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 tsp Cayenne
FOR THE BREADING
- 2 cup Panko bread crumbs
- 1/2 cup All Purpose Flour
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Cayenne
FOR THE HONEY MUSTARD
- 1/2 cup Mayo
- 1/4 cup Yellow Mustard
- 3 Tbsp Honey
- 1/2 tsp Paprika
Instructions
- Preheat oven to 400 degrees.
- Filet the chicken breasts in half then cut again into two pieces to create sizes perfect for a sandwich. I bought chicken breast cutlets that were already sliced.
- In a medium bowl, mix together all the marinade ingredients, then add the chicken to the bowl and mix it well to coat all the chicken. Set aside.
- In another medium mixing bowl, mix together all the breading ingredients. Set aside.
- Place a piece of parchment paper on a baking sheet. (parchment paper optional). Then place a cooking rack on the baking sheet and spray with cooking spray so your chicken doesn't stick.
- Take a piece of the chicken from the marinade and dredge it in the bread crumb mixture. Place on the rack. Do this to all the chicken. I like to spray the top of the chicken with cooking spray before I put in the oven to give it extra crispiness but it's not necessary.
- Cook in oven for 20-25 minutes at 400 degrees. Put on broil for the last two minutes of cooking.
- While chicken is cooking, mix all the honey mustard ingredients in a small bowl.
- When chicken is done, assemble your sandwich with honey mustard, chicken, lettuce, and tomato. Enjoy!
